Nitrile is the go-to material when you need puncture resistance and chemical tolerance—particularly useful when handling acidic marinades, cleaning agents, or sharp bones in raw meat prep. Vinyl offers a looser fit and works well for short-duration tasks where dexterity matters more than durability. Both materials are available in EN 1186-tested versions, meaning they've been assessed for migration of substances into food. Non-certified gloves may leach chemicals or particles during use, which is why food establishments should verify certification before bulk ordering.

UK Colour Coding and Cross-Contamination Control

Colour-coded gloves aren't a legal requirement, but they're standard practice across UK kitchens for good reason. Blue designates raw fish and general prep; red handles raw meat; yellow manages cooked meat. This system reduces the risk of pathogen transfer when staff rotate between tasks. If your kitchen doesn't enforce colour separation, consider whether the efficiency gain from buying one colour in bulk outweighs the contamination risk during peak service.

When to Change Gloves During Service

Disposable gloves must be changed after each task to prevent cross-contamination—this isn't optional. West Lothian Council's food hygiene guidance specifies single-use gloves are particularly important when food handlers wear plasters, preventing bandage material from entering food. Change gloves when moving from raw to cooked product handling, after touching non-food surfaces (door handles, bins, phones), and whenever a glove tears or becomes visibly soiled. The false security of gloved hands leads some handlers to skip handwashing between changes; don't.

AQL Standards and Glove Quality

AQL (Acceptable Quality Limit) measures defect rates per batch. An AQL of 1.5 means statistically 1.5% of gloves may have pinholes or tears—the food industry standard. Higher AQL ratings (2.5 or 4.0) are cheaper but increase contamination risk. A study in the Journal for Food Protection found that glove quality directly impacts microbial transfer during food handling, so specification matters. For high-risk environments (raw poultry processing, ready-to-eat assembly), insist on AQL 1.5 or lower and verify batch testing documentation from your supplier.
